Christmas is fast approaching and I know by our Christmas themed sales many of you are preparing your handmade gifts.
Here are a couple of tips to make it enjoyable:
1. make your gingrbread dough and freeze it.
2. sketch the designs you intend to create and make a list of what you will need.
3.presentation is everything. Source bags, ribbon (try http://www.ribbonsgalore.com.au) and cardboard backing to package your cookies.
4.pre-make gift cards to attach to your gift.
5. pre- colour fondant 2 days prior to decorating cookies.

Egg and Dairy Free Cake Recipe
Many thanks to one of our customers "Ada" who has kindly shared this recipe with us.
EGG AND DAIRY FREE CAKE
ingredients
1 1/2 cups self raising flour
1/3 cup custard powder (substitute 1/3 cup of cocoa if you are making a chocolate cake).
1/2 teaspoon salt
1 cup water ( substitute milk for a richer cake if dairy is not a problem)
1/3 cup canola oil (or melted butter if dairy is not a problem)
1/2 tablespoon of vanilla essence
1 tablespoon lemon juice
method
sift flour, custard powder and salt in large bowl.
stir in sugar
combine the water, oil, vanilla and lemon juice in jug
whisk the water mixture into the flour mixture
bake in a lined 20cm cake tin at 180 cegrees celcius for 30-40 mins approx.

JUNGLE ANIMALS, TEDDIES AND CRITTERS
In this class your will learn how to model using fondant and modelling paste. You will be taught various finishing techniques to guarantee a professional result.
Cutters, modelling paste, fondant, colours, and mat are all provided for you to use during the class. Notes and a cake box to take home your creations are also included in your registration.
Please bring:
Small rolling pin
Modelling tools
Brushes for glue and dusting
Apron
Cost is $110.00. The class will run over two Saturday's (18th and 25th of September) from 10am - 12pm.

WIRED CAKE DECORATIONS-tips for getting it right!
These are so easy to make and can transform an ordinary cake into a celabratory centre-piece!
1. Give yourself plenty of time. These babies have to be dry to be functional. We allow one week as the weather effects drying time.
2. Use florists wire 20g. White or silver looks best.
3. Hook the end of the wire that will be inserted into the fondant cut out using a pair of pliers. This prevents the cut-out from spinning on the wire and gives a greater surface area for adherance.
4. Apply sugar glue to the hooked wire prior to insertion. This also helps to stabilise and adhere.
5. Dry flat.After two days of drying turn the wires over to allow both sides drying time.
